/usr/share/applications/gimp.desktopファイルの内部を見てください。 Imageフィールドの値がgimpに設定されていることがわかります。そのため、GIMPアイコンの絶対パスは指定されていません。これは、システムがおそらく/usr/share/iconsでアイコンを探すことを意味します。しかし、GIMPにはさらにアイコンがあり、テーマとこれを表示する解像度に応じて適切なアイコンが選択されます：
